Traditional Cutting:

 

Traditional cutting uses tools with sharp edges to concentrate very high pressure on the cutting edge, pressing it towards the material being cut. When the pressure exceeds the shear strength of the material being cut, the molecular bonds of the material are pulled apart, thereby achieving cutting. Due to the fact that the material is forcefully pulled apart by strong pressure, the cutting edge of the cutting tool must be very sharp, and the material itself must also withstand relatively high pressure. Therefore, the cutting effect is not good for soft and elastic materials, and it is more difficult for viscous materials.

 

Common problems with traditional cutting:

 

1. Need sharp blades, increase the requirements for blades;

2. Cutting cloth cannot seal the edges, as cutting edges can easily cause edge breakage and damage;

3. Sticky objects are difficult to cut and easily stick to knives, affecting cutting effectiveness and efficiency;

4. When cutting, pressure needs to be applied to the object, which can easily deform soft or fragile food;

5. When cutting certain items, a large amount of particles and fragments will be generated, increasing waste.

 

Ultrasonic Cutting:

 

Ultrasonic cutting uses the energy of ultrasonic waves to melt the local heating of the material to be cut, thereby achieving the purpose of cutting the material. Due to the ultrasonic vibration of the cutting blade, the frictional resistance is very low, and the cutting material is not easily adhered to the blade. It is particularly suitable for cutting viscous and elastic materials, frozen materials (such as food, rubber, etc.), or objects that are not easily pressurized.
